And this is loaded with all the best ingredients, this is so satisfying and it keeps really well, in the refrigerator so it is perfect for meal preparation,

and friend I am going to show you how to make homemade Italian dressing,

That will make you fall in love with Italian pasta salad,



8 oz Rotini Pasta (can also use tri-color)

►6 oz Salami, sliced into strips

►10 oz Cherry tomatoes, halved (3 cups or 1 pint)

►1/2 English Cucumber, diced

►1/2 medium Red Onion, diced

►8 oz Fresh Mozzarella Pearls (or mozzarella balls halved)

►1/2 cup Black Olives, pitted and sliced

►1/2 cup Kalamata olives, pitted and halved

►1/2 cup Roasted Red Peppers, coarsely chopped

►1/3 cup parsley, finely chopped

►1 cup Italian Dressing


►½ cup extra virgin olive oil

►3 Tbsp white wine vinegar

►1/4 cup Parmesan cheese, finely grated

►1 Tbsp mayonnaise

►1 tsp granulated sugar

►1 garlic clove finely grated or pressed

►1/2 tsp dried oregano

►1/2 tsp dried parsley

►1/2 tsp dried basil

►3/4 fine sea salt or added to taste

►1/2 tsp black pepper or to taste

so friends let’s get start Italian pasta recipe,

We will start with the simple dressing, in a mason jar, half cup of extra virgin olive oil, and 3 table spoon of white vinegar,and next we are using one fourth cup of finally grated parmesan cheese, Now we are using one table spoon of real Mayo, and also add one table spoon of sugar, and to  balance out the vinegar, we are using finally great in one large garlic clove,

Even you can also use a garlic press,

Forever pasta seasoning we use half a table spoon each

Of oregano parsley and vessel, and also 3, 4th table spoon of salt and half table spoon of black pepper, most store bought salad dressings are Saltier, So if you do like more salt you can add the salt to taste, and cover the tightly with the lid, and shake it up until it’s well combined,

I love making this in a mason jar, because you can make it ahead and its keeps really well in the refrigerator, Then just before serving just give it a good shake, try that yummy dressing and you can add more salt to taste at this point,


How to make italian pasta salad

Now we will set that aside and make our Italian pasta salad, For cook the pasta we will take a large sauce pan, for water to a boil, now casually add salt to the water, then add eat ounce of rotini pasta, and cook according to the package instructions, until it’s all dente or firm to the bite, it is very important that you don’t over cook the pasta,

While the pasta is on the stove, you can prepare the rest of your ingredients, slap up 6 ounces of salami into thin strips,

Now we are cutting in half 10 ounces or about three cups of cherry tomatoes, and I find it easiest to use a serrated knife, to get through those tomato skins, and if you have a tricks, for perfectly cutting of cherry tomatoes,

Next I am cutting dies up half of an English cucumber, and what I love about this salad, if you don’t like cucumber you can also try bell peppers, Next finally dice one medium red onion, and I do like to finally dice so that it is still has all of that great onion flavor, but it disappears into the salad, now next you will need eight ounces of fresh mozzarella,

I am using mozzarella pearls because it’s very easy, and you don’t have to cut them, but you can also use Mozzarella balls, hand cut those in half or use in 8 ounce block, of fresh mozzarella and just dice it up,

Now we are using half a cup of black olives, and you can buy those pitted and the sliced already, to save yourself sometime, but I also love to add half a cup of KalaMata olives,

Make sure you get the once that are pitted, and just cut them in half, and we will also add half cup of roasted red peppers, coarsely chop those up, and you can you store bought roasted red peppers in a jar, and you can roast your own,

And the last but not least I am using finely chop 1/3 cup of fresh parsley,


No make sure that you have your timer set for your pasta, and turn it off as soon as it reach all dente, the end drain of the hot water write away, and rinse under cold water until the pasta, it is completely cooled down, Renising the pasta is a cold water does three important things it stop the cooking process remove axcess starch and cool down the pasta,

Now just layer everything into a larg salad bowl, starting with the pasta as a base, I love very much arranging things in a ring, that way you can see all the tasty, And beautiful ingredient, and it just look irresistibly good. I love that you can really customize the salad, and if there is something special, that you put into your pasta salad,

Oh now I am very excited, now all that’s left to do is to dress it up and serve it, and if you wanted to make it ahead for a party or for meal preparation you could just cover it with plastic wrap, and pop it in the fridge and it will last longer that way,

Before adding the dressing, or you can dress it a couple hours before your event, so let’s do this, Alright and then with a dressing, there is some settling and that’s a normal, it can separate, so just before serving give it a good shake, to combine everything back together, make sure it’s really smooth,


And then sometime to meled alright let’s do this and we generous just add the dressing to taste, alright now that we have added a generous amount of dressing, we just have to toss this together, so that every bites is coated in that scrumptious dressing,

Oh my god my mouth is totally watering for this, and I am very hungry and I am going to eat this Italian pasta salad,

This is perfect because it is a meal in itself, it is loaded with grain and protein with salami and cheese, and then tons for fresh veggies,

This is such a great treat, and also perfect for parties because it is make ahead, it’s so good, okay I am going get right to this, seriously I am so hungry alright here we go


Now it’s just a nice blend of everything, cause I don’t like pasta salads where it is just a ton of pasta, I like it ton of everything, okay here we go try to get a little bit of everything on my fork, in which there is a lot of stuff

Now I am testing this Italian pasta salad, yummy it is so good, I love the different texture in their too, you have got the tender plump noodles, and the cheese of course and then the crisp veggies the cucumber and tomato, it is such a treat, it just feel so fresh and so so satisfying,

And and then seriously this dressing you have to try this dressing not just for this pasta salad but for all of your salads , it is just such a good Italian dressing. Also before you add the dressing this is perfect for meal prepping,

It’s perfect for work lunch school lunch so delicious and satisfying and there is no need to heat it, and I love that you can change it up, based on what you have in the fridge, you can also add some fresh Bell pepper, and you can add a different kind of veggie, it’s just really up to you
