Hey what’s up guys you are once again welcome on my new block today I am making Tawa pulao this is the same tawa pulao that you get on the street of Mumbai on the pav bhaji stalls it is very simple process,

Prep time: 20-25 minutes (excluding soaking time) Cooking time: 15-20 minutes Serves: 4-5 people

What Is Tawa Pulao

Friends Tawa Pulao is  basically  popular street food from Mumbai whereit is make with rice is cooked with vegetables, spices and butter. It’s spicy, tangy and packed with flavors. Best enjoyed with a side of cooling yogurt and red chutney

Really tangy spicy and loaded with garlicky flavour it is such a joy to eat such tawa pulao along with that the garlicy red chutney that you get the same on that is served with pav bhaji on tawa pulao,

I am also going to tell you how to make that chutney in this recipe

How To Make Tawa Pualo

First of all to make the tawa pulao let’s see how to boil the rice,

Igredients:

  • SELA BASMATI  1 CUP (SOAKED)
  • SALT TO TASTE
  • TURMERIC POWDER  1/4 TSP

So here I have taken one cup basmati rice this variety of rice is the best to make tawa pulao we will wash it nicely and then soak it for 10 to 20 minutes in water and then drain the water, now in a large stock pot bring the water to a rolling boil and now you will add salt according to taste and we will add 1/4 table spoon turmeric powder, now we will add soaked rise to it, and they we will cook the rice while stirring gently at regular intervals, basmati rice takes a little longer to cook properly so it may take around 10 to 15 minutes to cook the rice once you are rice is cooked is train your rice and transfer them to a large sieve,

Now using a fork lightly fluff up the rise, to remove the excess steam and prevent your rice from our cooking, and let the rise rest like for 10 to 20 minutes,so that they come up to room temperature and your rice will be ready,

Here I am taking soaked 30 Kashmiri dried Red chillies, and I have also deseeded them, now I am adding them to a mixer grinder along with 100 grams garlic and 7,8 spicy green chillies and we will add some water to grind it into a fine paste,

So friends our fine paste is completely ready I have nicely ground everything together and our chilli garlic paste is ready,

So friends now about this garlic paste that I have made here usually what is done at the street vendors is they make Kashmiri red chilli paste and the garlic paste separately and then add them separately the Kashmiri red chilli paste at the colors and the garlic water or paste add that garlicky flavour,

Gajar Ka Halwa

I have combined them to form a single paste here now some amount of paste from this will be used to make tawa pulao and I will make the chutney from the remaining paste that is left over

Now let’s see how to make tawa pulao on the tawa,

Cooking tawa pulao Ingredients:

  • KASHMIRI RED CHILLI  30-35 NOS. (DESEEDED & SOAKED)
  • GARLIC 150 RAMS
  • GREEN CHILLI 7-8 NOS.
  • WATERAS REQUIRED
  • BUTTER  2 TBSP
  • OIL  1 TBSP
  • CUMIN SEEDS 1 TSP
  • VEGETABLES ONIONS  1 MEDIUM SIZED (SLICED)
  • CAPSICUM  1/3 CUP
  • (JULIENNE) TOMATOES 1/3 CUP (SLICE)
  • CABBAGE 1/3 CUP (JULIENNE)
  • BEETROOT 2-3 TBSP
  • (GRATED) POTATO 1 NOS. (BOILED & DICED)
  • GREEN PEAS 1/4 CUP (BOILED)
  • POWDERED SPICES
  • TURMERIC POWDER 1/4 TSP
  • KASHMIRI RED CHILLI POWDER  1 TSP
  • CORIANDER POWDER  1 TSP
  • PAV BHAJI MASALA  1-1.5 TBSP
  • SALTTO TASTE
  • RED CHILLI GARLIC PASTE  8-10 TBSP
  • HOT WATER  AS REQUIRED
  • GARAM MASALA  A PINCH
  • KASURI METHI  1 TSP
  • FRESH CORIANDER  A SMALL HANDFUL (CHOPPED)
  • LEMON JUICE  1 TSP

So friends here I have take a large tawa and we will add to table spoon of butter, and we will add one table spoon oil you can use any eating oil and along with it we will add one table spoon cumin seeds to it, now we will add medium sized sliced onion now saute this onion until it’s light golden brown in colour, once you are onion is light golden brown in colour then to this we will add one third cup Julienned capsicum, one third cup tomatoes 1/3 cup cabbage, 2,3 tablespoon grated beetroot and one boiled and diced potato, and 1/4 Cup boiled green peas,

After adding all these vegetables stir them well, once everything is stirred then we will add some spices to it,

Now we will add some spices 14 table spoon turmeric powder, one table spoon Kashmiri red chilli powder 1 table spoon coriander powder 1 table spoon pav bhaji masala and we will add salt according to taste and now you will add 8 to 10 table school of the chilly garlic paste that we have just made now you have to stir everything really well,

Now we will add some hot water to it,after adding the hot water while stirring cook it on high flame for 5 minutes, keep in mind not to cook the vegetables too much the crunch of vegetable should be intact after cooking it for 5 minutes we will add the boiled rice to it along with it we will add one pinch of garam Masala one tablespoon kasuri methi and freshly chopped green coriander leaves and one tables lemon juice after adding all these things mix everything well again after mixing you have to cook the rice with these vegetables for just 5 minutes don’t cook for too long as the rice is already cooked just is there and cook the tawa pulao for 5 minutes,

Once you have nicely cooked the rice with the masala for 5 minutes in the end we will add lots of chopped fresh coriander leaves,

And you can see your tawa pulao is ready

Red garlic chutney Ingredients:

  • BUTTER  2-3 TBSP
  • OIL 2-3 TBSP
  • CUMIN SEEDS1/2 TSP
  • KASHMIRI RED CHILLI POWDER  1/2 TSP
  • PAV BHAJI MASALA 1/2 TSP
  • CUMIN POWDER  A PINCH
  • RED CHILLI GARLIC PASTE 
  • REMAINING SALT  TO TASTE
  • BLACK SALT A PINCH
  • HOT WATER  200-300 ML OR AS REQUIRED

No friends we will make garlic chutney for this to make the garlic chutney into a pen we will add 5 table school butter, and we will add 5 table spoon oil half tablespoon cumin seed half table spoon Kashmiri red chilli powder half table spoon pav bhaji masala and pinch of cumi powder give all these ingredients and quick stir

Now at this stage we will add remaining of our chilli garlic paste along with that add salt according to taste and we will add A pinch of black salt to this and stir nicely, after stirring some hot water to it approximately 200 ml, Now you have took this chutney for 10 minutes on high flame, now after 7 to 10 minutes the oil has slightly started separating from the chutney, our chutney is nicely cooked, so our Red garlic chutney is ready,

And our tawa pulao is ready, our chutney is ready too, cool down the chutney slightly before using,

So friends our both components are ready let’s serve our tawa pulao,and garnish with chopped fresh coriander leaves, and with raita,and red chutney and some chopped onion and some chopped cucumber,and sprinkle some chaat masala, and lemon juice,

So friends tawa pulao has turned out automatically mumbai street style, and i absolutely enjoyed it, and this tawa pulao is born from the same pav bhaji stall, and it’s such a joyous experience to eat it, That spicy tangy, garlicky, pungent flavour it’s a food lovers guilt pleasure, And you can serve it with raita on side some places also serve paped on the side,
