Whats up guys you are welcome on my new blog today I am making famous Gujarati special dish dal dhokli

This this is a really comforting and its a whole some meal in a bowl,

What is dal dhokali

Basically what the Dal dhokli is there is a Gujarati style sweet and sore dal and into that a wheat roti made with some spices in the dough, which is then cut into square or diamond and drop it into the dal,

And then both are cooked together this dish tastes really beautiful, specially if the weather is a little nippy then this this really comforting, and I sort of call it an Indian pasta cz it look like pasta like sheets are cooked in the dal, it’s short of a beautiful and simple dish

Ingredient are required

Ingredient

  • one cup toor dal (split pigeon peas)
  • One Tablespoon turmeric powde
  • two tablespoon peanuts
  • ghee
  • two table spoon oil
  • 1/2  table spoon cumin seeds,
  • 1/2  teaspoon mustard seeds,
  • 3, 4 cloves,
  • half inch cinnamon,
  • Two dried Red chillies,
  • 1/2  teaspoon fenugreek seeds,
  • 1/4 teaspoon Asafoetida,
  • 8 to 10 curry leaves,
  • one chopped tomato,
  • one table spoon ginger garlic chilli paste,
  • Salt for taste,
  • one tablespoon jaggery,
  • one tablespoon tamarind pulp,
  • Lemon Juice
  • 1/2 TSP carom seeds
  • chopped coreander leave

 

How to make dal dhokli

so let’s see how to make dal dhokli

First of all I have taken one cup Toor dal split pigeon peas,you have to wash it nicely and soak it in water for 1 hour, and your dal will swell up like this after soaking,

Boil Toor Dal

Now we will discard the soaking water and then transfer it to be a pressure cooker, and then we will add three cups of water to it meaning then ratio of dal to water is one ratio 3, and 1/4th tspo turmeric powder, and add salt to taste, now I am taking two tablespoon peanuts it in a steel bowl placed into the cooker to steam,

now I will cover the lid of the cooker and cook it for two or three whistles on medium to high flame, while dal cooks even the peanut will get steam so it will like killing two birds on one stone,

Once your dal is cooked and the steam in the cooker has settled, then lift the lid of the cooker and carefully remove the peanuts using tongs, we have to make the texture of the dal really smooth,

Blend Dal

Here I am using a hand blender nicely blend the dal using a hand blender, if you don’t have a hand blender then take a whisk and nicely whisk the dal until it your dal becomes really smooth in texture, now our dal is ready we have to temper it,

How To Cook Dal

Now we have take a small vessel heat two table spoon ghee in a vessel, now we will add 1/2 table spoon cumin seeds, half teaspoon mustard seeds, 3 4 cloves, half inch cinnamon, to dried Red chillies, half teaspoon fenugreek seeds, half teaspoon Asafoetida, 8 to 10 curry leaves, one chopped tomato, one table spoon ginger garlic chilli paste, and we will add salt to taste and stir is really well,

And here you have to cook the tomatoes until mushy, once your tomatoes are mushy than to this add half table spoon turmeric powder, and half table spoon Kashmiri red chilli powder and stir a little bit, and then quickly add our cooked dal to this, now stir to incorporate everything well, now you can see that our dal right now is slightly thick, now we will add hot water to it to adjust its consistency,

PRO TIPS

To make the consistency of your dal slightly thin, keep the dal a little bit thinner as it will still cook down quite a bit, and then we add dhokli to it it will further thicken up, once you have nicely stirred it then add the peanuts to it, one table spoon jaggery and I am adding one table spoon tamarind pulp, I am adding a little bit of jaggery and tamarind right now we can just it later,

You can even add lemon instead of tamarind, now turn the stove low and let the dal continue to cook, so friends our daal is cooking now,

while our dal is cooking we will knead the dough for dhokali roll it out cut it and add it to the dal simultaneously,

I have take one cup whole wheat flour, take equal amount of flour of the dal ek table spoon gram flour, a pinch of salt, a pinch of Asafoetida, 1/2 TSP carom seeds, half teaspoon turmeric powder, half teaspoon Kashmiri red chilli powder, and we will add two table spoon oil and mix it properly,

Now we will add slowly water to this and knead it into a dough, like make the dough which is similar to a chapati aur a Puri dough,  after incorporating all the ingredients knead it for two three minutes and prepare a semi soft dough like this,  your dough is ready cover it with a moist cloth and let it rest for 5 to 10 minutes, after resting the dough divide it into two equal parts,

After dividing it make it into a dough wall and then dust it with dry flour and roll it out, roll it out like we roll a chapati, just make sure that it’s not too thin if you eat thin chapati at home, this should we rulled out of a normal chapati thickness,

After rolling it out I am going to cut it you can see how I am cutting it into diamond shapes,

Now going back to the dal lets taste the dal here, after testing the dal adjust the salt jaggery and tamarind as it adjust the sweet and sure element,

I have added one more tablespoon of jaggery tamarind each, on the adjustment is done then make the flame high and let it come to boil, Dalal should be on a rolling boil while you add dhokli to it,

now you can see that the dal is boiling so slowly slowly and carefully I am adding the dhokli that we had cut earlier,

After adding this dhokli is stir it with gentle hands, now we will cover it and let it cook on medium flame for 10 minutes, after cooking for 10 minutes lift that lid, hey friends now you can see that your dal dhokli is completely ready, and the dokly should expand and become slightly thicker and cook well from within,

and due to starch in the wheat even your dial will thickens slightly you can see how it has thickened, now lastly we will add freshly chopped coreander leave to in it,

And friends you can see that our Dal dhokli is completely ready

Now we will plate it our dal dhokli we will add some coriander leaves we will add some lemon juice, and after that we will add one table spoon desi ghee,

Dalal dhokali has turned out really yummy, I find this bowl of the Dal dhokli very delicious wholesome and very comforting,and I have been having this since my childhood as there were too many Gujarati household in my neighbourhood, and they used to make the dhokli many times and my friends would make me eat it,

Since then I really dal dhokli and I love daal dhokali
