Ingredients: Pesto

  • OLIVE OIL  2-3 TBSP
  • GARLIC  1 CLOVE
  • WALNUT  4-5 NOS.
  • SALT  A PINCH
  • BASIL LEAVES  100 GRAMS
  • PARMESAN CHEESE 50 GRAMS (GRATED)
  • OLIVE OIL  3 TBSP
  • Boiling pasta
  • SALT  A LARGE PINCH
  • PASTA  250 GRAMS (PENNE)
  • Final Assembly PASTA  AS REQUIRED (HOT)
  • PARMESAN CHEESE  AS REQUIRED
  • PESTO  AS REQUIRED
  • PASTA WATER  1-2 TBSP
  • SALT IF REQUIRED

My Pesto Recipe

Today I am going to tell you how to make pesto, in Italy pesto is made using basil leaves, along with olive oil parmesan cheese, a bit of garlic, and pine nuts are added to make it, now a variety of versions of pesto are made world wide, like even in Italy instead of pine nuts bread crumbs are used to make a cheaper version of it, peanuts almonds or walnuts are also used,

How To Make Pesto

1. Today I am going to use walnuts as walnuts are easily available in our Indian kitchens, pine nuts are really expensive but you can use pine nuts as well, and make this recipe,
2. fAter making the pesto I am also going to tell you how to make pasta in pesto sauce, it is a very easy process I am also going to tell you how to perfectly boil pasta,

 

 

3. It is a very simple and quick recipe lets learn how to make pesto,

4 In a chopper we will add 2-3 tablespoon extra virgin olive oil, 1 clove of garlic, 4-5 walnuts, and we will add A pinch of salt and grind it nicely, we are grinding them before as we want the nuts and the garlic to nicely get crushed, because after that when we add basil, we don’t have to grind for longer which will avoid heat generating in the grinder,

5. At this stage I have taken a big bunch of 100 gram of cleaned basil leaves, and I am adding 50 gram of grated parmesan cheese hare, and I am adding one tbsp more of extra virgin olive oil,

6. Now you have to grind this pesto don’t make this into a very fine paste, so grind it coarsely, and in between I will remove the lid and add some more oil,and in total I am going to use 2-3 table spoon earlier and 4 to 5 tablespoon more olive oil now, so in between open the laid scrape the sides, and add some more oil and continue to grind, until it’s a consistency becomes Thicken,

7. Now our pesto is ready, now the basil that we get in India is slightly darker in colour, now if you want to brighten up the colour of this Pesto then there is a way to do it, that is also the right way to do it nothing wrong with it is to make pesto with blanched basil,

8. So add basil to boiling water just for a few seconds, and remove it and shock it in ice cold water, just like how we blanch spinach for palak paneer, after blanching pat it dry and use that basil, then the colour of your pesto will be really bright green, this pasto is usually made really fresh and used immediately it’s not stored, as it start oxidising within a few minutes and turn darker in colour, it start changing its colour to darker tones really soon,

9.  Pmade with blanched basil doesn’t darken so quickly, you can store it in the refrigerator for sometimes, so this is one tip that I have told you, and whenever making pesto make it fresh and use it immediately that will give the best result, now you can add this pesto to pastas, you can even add it to the white sauce pasta, and it can be added on pizza, you can add it to chicken before grilling it, so there are a variety of application for it,

10. So today I am going to tell you how to make a simple pesto pasta, so let’s start how to perfectly boil pasta,

11. First of all bring the water to a rolling boil it is very important that the water should be thorougly boiling, then we will add a large generous pinch of salt to this, and after that adding the salt I am adding penne pasta here, and I am adding 250 gram pasta hare, this amount will be sufficient to use of the entire pesto sauce batch,we will set a timer and the boil the pasta for 8 minutes,

12. Just immediately after adding the pasta stir once, within 8 minutes you can stir the pasta 2-3 times the pasta can get stuck to the bottom of the pan sometimes, so boil the pasta by an 8 minutes timer, after that we will remove the pasta from the water, so our pasta is perfectly cooked,

13. When you bite into the pasta then it should have a slight bite to it, which means it is ai dente, so it should be almost cook or almost done, so that is how your pasta should be boiled, if you like your pasta well cooked then you can do that too nothing is really wrong, a lot of us Indians like properly cooked pasta, then boil it to further for 2 to 3 minutes,

14. Once your pasta is boiled take it out into a strainer and strain it, if you are going to use the pasta a little later in time, then add some oil and mix it, if you are using it immediately like I am using it today then you can do that too, reserve the pasta water dont discard it,

15. Now transfer hot pasta into a bowl, now as per your requirement grate and add parmesan cheese, along with that add the basil pasto that we made earlier, now stir it nicely, while stirring, if you feel that it is slightly dry then add some pasta water into it, this is why we had reserved the pasta water,

16. Stir it nicely to coat this pestop properly to the pasta, once you have done this process then test it and season it as per your teste, and add some salt if you needed and stir it again, and our pesto pasta is ready, now we will serve it,

So friends how easy is to make basil pesto, and also you learn how to make a pasto pasta which is very simple too, if you want to add vegetable to this pasta then take some olive oil in a pan, and add some sliced garlic and nicely brown it, and add some cherry tomatoes and some vegetables and then turn the flame of and add pasta and repeat same process of adding paremesan cheese pesto and mix, and if you add some white sauce than it will become a creamy pasta, so you can make a lot of versions like that,
