WHAT IS PRAWNS KOIWADA

Prawns Koliwada is a mumbai based crispy fried prawn appetizer, that is moderately spiced, lightly tangy, with the pungent flavor , and has a crispy coating which is in direct contrast to the juicy inside

 

Prep time: 10-15 minutes Cooking time: 10-15 minutes (excluding marination time) Serves: 3-4 people

Ingredients: First marination

  • PRAWNS  500 GRAMS
  • SALT  TO TASTE
  • TURMERIC POWDER  1/4 TSP
  • LEMON JUICE  1 TBSP

Vaatan

 

  • FRESH CORIANDER  A SMALL HANDFUL
  • GARLIC  10-12 CLOVES
  • GINGER  1/2 INCH
  • GREEN CHILLI 3 NOS.
  • WATER  AS REQUIRED

Batter & frying

 

  • POWDERED SPICES
  • KASHMIRI RED CHILLI POWDER 1.5 TBSP
  • SPICY RED CHILLI POWDER 1 TBSP
  • CORIANDER POWDER  1 TBSP
  • GARAM MASALA  1/2 TSP
  • CUMIN POWDER  1/2 TSP
  • BLACK SALT  1/2 TSP
  • BLACK PEPPER POWDER  1/4 TSP
  • DRY MANGO POWDER  1/2 TSP
  • CHAAT MASALA  1/2 TSP
  • ASAFOETIDA  A PINCH
  • LEMON JUICE 1 TSP
  • OIL  1 TBSP
  • EGG WHITE  1 NO.
  • GRAM FLOUR  3 TBSP (FINE)
  • CORN FLOUR  4 TBSP

First Marination

  1. Here I am taking 500 gram prawns which I have washed and deveined nicely, along with that I am adding salt according to test 1/4th teaspoon turmeric powder, 1 teaspoon lemon juice, mix all the ingredients and marinate the prawns, this is the first marination for the prawns, and like this marinate the prawns in the marination for 15 to 20 minutes,

2. Until then I am preparing a paste or varttan, In a mixer grinder we will add some fresh coriander leaves, 10 to 12 garlic cloves, half inch Ginger, 3 spicy green chillies, and we will add a little bit of water and grind it all together, here our green paste is ready,

Second Marination

3. After marination the prawns for 15 to 20 minutes we will add this stage to the prawns, along with we will add two table spoon Kashmiri red chilli powder, 1 tablespoon spicy red chilli powder, 1 table spoon coriander powder, half teaspoon garam Masala, 1/2 teaspoon cumin powder, 1/2 teaspoon black salt, half tea spoon black pepper powder, half teaspoon spoon dried mango powder, half teaspoon chat masala, A pinch of Asafoetida, and one teaspoon lemon juice,

4. Mix all these ingredients nicely with gently and apply this marinade on the prawns, we will add one table spoon oil after mixing a little while and mix it again gently again once you have applied the masala to the prawns then we will add one egg white to the prawns, and along with that we will at 3 table spoon fine gram flour and 4tbsp spoon corn flour, mix everything really well and coat the prawns nicely,

5. Now we will add oil in a kadai heat the oil nicely to fry the prawns, oil should be moderately hot approximately at 170 degree Celsius now drop the prawns one by one carefully into the oil, remember don’t fry to many prawns all together don’t over cook the prawns otherwise the masala gets of the prawns, and the temperature of the oil drop down and the prawns don’t become crispy,

6. So fry the prawns in small batches the prawns cook really fast they will cook within 1, 2 minutes, when they cook up to this stage then take the prawns out and keep them on a sieve, so friends the prawns get fried really quickly.

7. Actually prawns takes just want to minutes but the coating takes longer to cook, so today in this recipe I am doubling frying the prawns meaning they will be double crispy too, so friends you have fried the prawns like this first time after that heat the oil even more and let the prawns rest for 5 minutes,

Once your oil is hot again then we will just flash fry it and the prawns will Chris pup, prawns have rested for 5 minutes and the oil is heated up nicely,  and at them to the oil, and fry the prawns just for some second until they become crispy, fry the prawns for a few second then take them out, and again place them in the Sieve and let the excess oil drain off, and our crispy and delicious prawns koliwada are ready,

9. It’s a very easy to make prawns koliwada you have learn they are ready in a matter of minutes, prawns cook really fast too,
Now if you want to make fish koliwada then follow the same process just suitable the prawns with any boneless fish, this marination test very good with Rawas, then if you get rawas at home follow the same method and similarly double fry it, and you will get beautiful fish koliwada,

10. If you want to make chicken koliwada take bond less or chicken on bone use the same marinade, a lot of recipe use rice flavour I am adding some corn starch which gives amazing Crispness, rice floor also help Chris pup but corn flour gives a marginally better result, so this is how I make it,

11. Now is the turn off my secret chatney recipe without which this recipe is completely incomplete,

So let’s learn how to make the secret chutney in a mixer grinder jar we will take two Cup fresh mint leaves, one cup fresh coriander, 2 medium size onion, one tomato, 15 to 20 cloves of garlic, 1 inch Ginger, half cup spring onion green,s 8 to 10 green chilli, a lemon sized ball of tamarind, and we will add A pinch of black salt, A pinch of chat masala, one ice cube, and some water to grind it, now grind everything together nicely, so friends our special chutney is ready.

13. let’s plate our prawns koliwada, take some prawns koliwada in a plate and we will in sprinkle some onion, wrinkles and some chat masala, and we will add half katori special chutney, and sprinkle one lemon juice,

So friends our prawns koliwada have turn out to be mind blowing they are crispy and slightly spicy and tangy, that chat masala sprinkled on top and lemon juice onion and the special chutney the combination of mind blowing in fact along with this combination I have some pav which are roasted on open flame, add some chatni to the power prawns onion chat masala lemon juice, my my mouth is already watering you will love having it,
