And this is one of my most favourite foods and these sandwich are very unique there are certain components which are very important and make the sandwich distinct,
The grills sandwich that I am making today is veg masala grill sandwich there is a layer of potato masala in it and also some vegetables go in it and then it is grilled today we want need a grill machine it will be grilled on a skillet,
and grill sandwich is very different from the Mumbai street style masala toast sandwich that to send which are made in a special equipment and smaller bread is used,
And the grill sandwich is a grid on a grid machine I usually it is made in a large triangular braid,

So first of all let’s learn
#5 How to make Mumbai Street style sandwich masala
1. So we will take a fry Pan and heat a pan on high flame once the pan is hot, lower the flame, now we will add two tablespoon cumin seeds, one table spoon black peppercorn, one table spoon fennel seeds, two tablespoon cloves, and we will add half a star anise, and toast these spices on a low flame until they become aromatic,
2. Once the spices are toasted then we will transfer it to a bowl, and cool it down nicely before grinding, once the spices have cooled down transfer them to a mixer grinder along with that one tablespoon pomegranate seed powder, half table spoon asafoetida, half teaspoon dried Ginger powder, one table spoon black salt, and we will add 3 table spoon regular table salt,
3. Now grind these spices together to form a fine powder, so our spices powder is ground into a fine powder and other sandwich masala is ready,
4. Once you have made the sandwich masala you can store it in an air tight container it will stay good for three months it has quite a bit of salt in it,
so whenever you want to make sandwich you can use this masala,
5. You have learn that I have added 3 table spoon of salt salt is more as boiled vegetables or other vegetables don’t have salt in them, so the salt act as seasoning and the other ingredients add the spices Tangy taste,
6. So definitely add the sandwich masala, this is quite different from chat masala so don’t use chat masala you won’t get same result,
The other component that makes this Mumbai sandwich very distinctive is its chutney, it’s a spicy sandwich which is very necessary for the sandwich,

#6 How to make the spicy sandwich chutney
7. So I am taking one bunch fresh coriander in a mixer grinder jar, 15 spicy green chillies, 5 cloves of garlic, I am adding four balanced spinach leave for nice colour this is optional, 1 15 curry leaves, one table spoon sandwich masala, which we had made just now and a spinach of salt, and I am adding a slice of bread this is the street vendors trick to behind the chutney, and I am adding a ice cube to return colour and we will add water and grind it into a fine chutney,
8. So our beautiful colour and perfect consistency and Mumbai Street style chutney is ready,
9. So let me tell you how this sandwich chutney is slightly different it’s a quite spicy and garlicky, and mint leave are not added and the lot of spices are not added either this chutney add the spiciness to the sandwich, so make this chutney in a similar manner,
10. The chutney made for kabab or any other kind of green chutney will not give the same effect, you will enjoy the Mumbai sandwich only if you make this sandwich chutney, the bread slice that I added is usually added by the street vendors making sandwiches,
11. Because when chutney is apply on the bread it can becomes watery and make the bread soggy, that’s why that binding is necessary, it will make no difference to the taste, if you don’t want to add bread you can add bread crumbs, or you can add daliya daal roasted chana dal that will also give binding,
12. But for your authentic street style version I have made it just like it’s made on the streets, so definitely make this chutney and you will know the difference,
13. Now sandwich masala and chutney is ready next step is that we have to make a Potato mixture as we are making Masala veg grills and which,
so let’s learn
#7 How to make potato mixture
14. We will take a fry Pan and heat a pan nicely then we will add one tablespoon oil to it, once the oil is hot then we will add some mustard seeds, some cumin seeds 10 curry leaves, three green chillies chopped, and we will add one table spoon ginger garlic paste, and lightly mix it,
15. Then lower the flame now we will add half teaspoon turmeric powder, 1 table spoon Kashmiri red chilli powder, 1 table spoon coriander powder, and we will add A pinch of garam Masala, and stir it nicely, now we will add 1/4 table spoon asafoetida, 1/4th up Green peas,
16. And I have taken 6 boiled potato here and Crush them with your hands and add them, and finally add salt according to taste, now stir everything nicely, once stirred take a potato masher and stir the potatoes nicely, and combine everything well,
17. I have mashed potato nicely and everything is nicely combined, lastly we will add juice of a lemon, and we will add lots of freshly chopped coriander leaves and mixed nicely and our potato masala for masala grill sandwich is ready,
18. So friends our chatni, sandwich masala, and potato masala is ready now we have to assemble the sandwich,
#8 How to Assemble grill sandwich
19. Here I am using a triangular sandwich bread which is found in regular bakeries but if you don’t find it you can use regular bread too, you can even use brown bread too that’s not a problem, but traditionally this triangular white bread is used,
20. If you can find a large square bread then cut it in middle into two triangles that another way to do it too, if you want to make the grill sandwich in triangular shape,
21. Along with that I have already sliced some onions, tomatoes, and capsicums, this is also going to be used along with cheese, let’s learn how to assemble and cook the grills sandwich,
#9 Assemble grill sandwich
22. Now take a sandwich bread slice and apply soft butter on it end to end, now apply green chutney on it the chutney is usually spicy so add it is sparingly, now place this sandwich bread and apply a nice layer of the potato masala that we prepared early,
23. And nicely spread out the layer of potato masala now we will add a layer of finally chopped onion on it after applying the layer of onion sprinkles some sandwich masala on it, after sandwich masala take another slice of bread and apply butter and chutney on it and then place the bread on the sandwich with chutney and buttered side down,
24. Now again apply some butter and chutney again and the add slies tomato to it place a layer of slice tomato on the bread now again season that tomatoes generously with the sandwich masala then on top we will add a layer of chopped capsicum on it,
25. Now I am adding cheese on top I have taken processed cheese grate it and add on top, if you don’t want you can even avoid the cheese it is optional after getting the cheese cake and other slice of bread and apply some butter on it and apply some chutney and place the bread slice on the sandwich, we have to assemble our sandwich, now we will grill it,
#10 How to grill sandwich
26. Now we will take a grill Pan or a skillet if you don’t have a grill pan, whichever pan you are using heat up nicely first, once your pan is hot then lower the flame and then add some butter to it generously, after applying the butter place the sandwich on it after placing the sandwich take a plate and place it on top of the sandwich and apply some pressure,
27. Basically we are trying to replicate the sandwich griller by applying pressure from top to make the bottom layer is Crisp, and it gets some nice grill marks, so apply pressure from top now continue to cook the sandwich and it’s cooked from one side you are sandwich should be golden brown,
28. At this stage apply some butter on the top layer to help our sandwich toast better, and carefully you have to flip the sandwich, Flip it and again place the plate on top and continue to cook the sandwich and bake it is cooked nicely from the other side too,
29. So friends finally our grills sandwich is a cooked from both side now we will serve it,
30. So we will cut our sandwich and apply some butter on it some sandwich chutney on top and sprinkle some process cheese and sprinkle some nylons sev and sprinkle some sandwich masala and along with green chutney and red sauce so our grill sandwich is completely ready to eat,
