Hey what’s up guys you are welcome my new blog today I am making veg sandwich you can also saying Mumbai Street style Junglee grill sandwich or veg sandwich

Now what is this Junglee style grill veg sandwich, so Mumbai grill sandwich we know is very famous, now about Junglee sandwich in childhood when at restaurant or street we used to eat grill veg sandwich, there we used to get a Junglee veg Sandwich to the difference between them was, that along with Veggies a mayonnaise based coleslaw used to go within the veg sandwich, and this combination test really delicious, that’s why it’s so much fun to eat this version of grill sandwich,

Now the essence of any Mumbai style veg sandwich is based into important things first is sandwich masala which is quite different than chat masala and second is sandwich chutney which is very different from any other normal traditional green chutney,

Ingrediant

  • Sandwich masala Ingredients:
  • Cumin seeds
  •  1 tbsp Fennel seed
  • 1 tbsp Black peppercorns 
  • 1 tbsp Cloves
  • 2 tsp Star anise
  • ½ Anardana powder 
  • 1 tsp Dry mango powder
  • 1 tbsp Asafoetida
  • 1/2 tsp Dry ginger powder 
  • 1/2 tsp Black salt 
  • 1 tbsp Salt
  • 2.5 tbsp

so I am going to show you how to make both these components in Mumbai Street style and then a perfect grill  veg sandwich a perfect crispy sandwich recipe, and that two without using any equipment just on a grill Pan I am going to tell you how to do that, it is a very beautiful recipe a street style

How To Make Sandwich Masala

first of all let’s see how to make sandwich masala, I have taken a pan heat up a pen nicely, once the pen is hot lower the flame completely now to this add one table spoon cumin seed, one table spoon fennel seed, 1 table spoon black peeper corns, two table spoon cloves, and add 1/2  to tstar anise to this,

Now you have to roast these spices on a low flame nicely, until these spices turn fragrant, and your spices get warmed up and toasty,

TIPS

But we careful not to won the spices,once your spices are toasted then transfer them to a bowl and cool them down,what’s the spices are cool down then transfer to a mixer grinder along with it add one table spoon dried pomegranate seed powder, one table spoon dried mango powder, 1/2 table spoon Asafoetida, half teaspoon dried Ginger powder, one table spoon black salt and 2.5 table spoon salt, now we will grind all these spices together to form a fine powder, so I have grounded the spices together and you can see that you are sandwich masala is ready,

so friends our sandwich masala is ready now you can store this masala in an air tight container no need to refrigerate it you can store it outside to it has a lot of salt so it does not spoil, you can easily store and use it for 5-6 month,

but the quantity is that I have made is used up within a month at my home and keep it prepared always, because not just for this sandwich any sandwich at this sandwich masala it makes a beautiful sandwich,in fact I even eat a sandwich made with butter chutney potato this masala and cheese,

so with this masala and chatni that I am making sandwich chutney with them even if potato sandwich taste beautiful,

Sandwich Chutney

So next now you know what I am going to make, how to make Mumbai Street styles sandwich special spicy chutney is made.

  • Special green sandwich chutney Ingredients:
  • Fresh coriander 1 big bunch
  • Spicy green chillies 10-12 nos.
  • Curry leaves 10-12 nos.
  • Spinach  (blanched) 2-3 nos. (optional for colour)
  • Garlic  4-5 cloves
  • Roasted chana dal 
  • 1 tsp Sandwich masala 
  • 1 tsp Salt to taste
  • Ice few cubes
  • Bread  1 slice
  • Water as required

Let’s see how to make that chutney,

in a mixer grinder Jaat take a big bunch of coriander meaning to cup of coriander leaves, 10 to 12 spicy green chillies 10 to 12 curry leaves 2,3 balance spinach leave these are optional they give it good colour 4,5 garlic cloves one table spoon roasted chana dal one table spoon sandwich masala that we made earlier salt to taste now at some ice cubes the help written colour as well and now I am adding one slice bread this is a trick to retain water in the chutney now you have to blend everything together to make it into a fine chutney,

if you feel the need you can add a little bit of water while grinding the chutney to make it easy to grind, grind it into a fine chutney,now you can see it’s a got a variant colour and our beautiful sandwich chutney is ready,

So this is how Mumbai style sandwich chutney is made it is very important some flavours in this are very important firstly there is no mint in it if you notice don’t add mint leaves otherwise the flavour profile completely change secondly use the spicy green chillies the chutney should we really spicy along with that the sandwich masala that goes into it gives it a nice tanginess as well, and that flavour of organic is very important,

so all these things combined gives an amazing chutney,the balanced spinach leaves that I have used is for a very and colour, even the street vendors use spinach leaves for variant green, you can use it if you want otherwise it is completely optional, and the Slice of bread that I added basically what it is,while making sandwich on streets the crust of bread or even leftover braid is used to add into the chutney, the bread helps retaining water in the sandwich, so when the chutney is applied on the bread and then it is toasted it helps prevent the water seeping from the sandwich,

PRO TIPS

which is very important for the sandwich otherwise the bread will become very soggy, that’s why bread is added to the chatni while grinding it,this is also completely optional if you want you can skip it,

it won’t affect the flavour at all it might make difference in the texture and consistency of the chutney, so this was proper Mumbai style sandwich chutney, so now the masala is ready and so is the chutney,

How To Make Colesalaw

  • Coleslaw Ingredients:
  • Cabbage  1 cup
  • Carrot 1/2 cup
  • Mayonnaise  1/2 cup
  • Schezwan sauce/red garlic chutney 1-2 tbsp
  • Sandwich masala  a pinch

now let see how to make the colesalaw that goes in Junglee sandwich with mayonnaise carrot cabbage etc,

In a bowl take one cup shredded cabbage, 1/2 cup greated carrots, aadha Cup mayonnaise, one table spoon schezwan sauce or red garlic chatni this is optional, and a pinch of sandwich masala, now mix all these ingredient nicely and the coleslaw for our Junglee sandwich is ready,

now about major component are ready other than that I have butter bread vegetables like boiled potatoes, and I have capsicum tomatoes onions, so I have gathered all these things here now we have to assemble the sandwich and then let’s see how to cook this too,

How To Make Veg Sandwich

  • Ingredients:
  • Bread slice
  • Butter (at room temperature)
  • Spicy green sandwich chutney
  • Potatoes (boiled)
  • Sandwich masala
  • Capsicum (chopped)
  • Onions (chopped)
  • Tomatoes (sliced)
  • Prepared coleslaw
  • Sweet corn (blanched)
  • Processed cheese

Now apply butter generously on sandwich bread and to end, then on top of it apply our sandwich chutney nicely,now on top of it grate the boiled potatoes to add them, so grate the potatoes and make a nice layer of it, now sprinkle sandwich masala on it generously,

along with that I have finally chopped capsicum I am adding that on this, and I am adding job onion too on this, now take another bread slice and apply butter and spicy green chutney on it, and now place that on top like this, now again apply butter and our spicy green sandwich chutney on top, now nicely arrange tomato slice on it along with it add sandwich masala on top,

after adding the sandwich masala make a layer of the coleslaw that we prepared earlier, on top of the coleslaw I am adding some balance sweet corn however this is optional, now on top of it grated cheese if you like it,

after adding these cheese again apply butter and sandwich chutney on the bread and place it on top, now our sandwich is ready to be grilled,

Now take a grill Pan like this and heat up the grill pan nicely, if you do not have a grill pan then you can use a skillet too, the rest of the process will remain the same,

Once your pan is nice and hot applies some butter nicely on it after applying the butter place the sandwich on top of this after placing the sandwich take a plate like this after placing the plate on top you have to apply some pressure lightly,

Applying pressure is a crucial this replicates the mechanics of the sandwich grill or Panini press,so apply the pressure nicely by doing so you will heat perfect grill mark and the sandwich will get grilled nicely,

now you have to cook the sandwich until it turns Crisp and golden brown from one side,

Now you can see that your sandwich has become Crisp and golden brown from Blow,now apply some more butter on top after that flip it and continue the same process on the other side, again applying pressure on the other side continue to cook it until it turns crisp and golden brown,

so our sandwich is Crisp and golden from both side and you can see it has got perfect grill mark, and our sandwich is ready

Let’s plate our sandwich,

Now we will put some butter on top of sandwich, and some green chatni on sandwich and little bit cheese and nylon sev and green chutney and tomato ketchup,
