How To Make Veg Matka Recipe

This  veg Matka recipes come out to be an authentically dhaba style recipe and is best enjoyed with tandoori roti, it is very simple to make this recipe first of all we have to make a simple gravy

Base gravy Ingredients:

  • OIL  5 TBSP
  • CUMIN SEEDS  1 TSP
  • ONION  7 MEDIUM SIZE (SLICED)
  • GINGER  1 TBSP (CHOPPED)
  • GARLIC 2 TBSP (CHOPPED)
  • GREEN CHILLI  4 NOS. (CHOPPED)
  • CORIANDER STALK  1/2 TBSP

POWDERED SPICES

  • TURMERIC POWDER  1/2 TSP
  • SPICY RED CHILLI POWDER  1 TBSP
  • KASHMIRI RED CHILLI POWDER  1 TBSP
  • CUMIN POWDER  1 TBSP
  • CORIANDER POWDER  1.5 TBSP
  • GARAM MASALA  1 TSP
  • HOT WATER  AS REQUIRED
  • TOMATO  5 (CHOPPED)
  • SALT  TO TASTE

1. Let’s learn how to make that gravy so first of all we will take a metal pot and heat it up nicely, and we will add 5 table spoon oil to this once the oil is hot then we will add one table spoon cumin seeds to this, and we will add 7 medium size onion to this and stir it nicely, now you have to saute the onions nicely until they are golden brown and colour,

After sauteing the onions nicely for 8,10 minutes they are nice and golden brown, at that time we will add 1 table spoon chopped Ginger, 2 table spoon chopped garlic, 3 chopped green chilli, and I have added one table spoon coriander stem, here now we will stir everything properly and now saute the ginger and garlic for 2,3minutes,

3. So friends I have a properly sauteed the onion ginger and garlic, at this stage we have to add the spices so lower the flame we will add 1/2th table spoon turmeric powder, 1 table spoon spicy red chilli powder, 1 table spoon Kashmiri red chilli powder, 1 table spoon cumin powder,

4. And 1 table spoon coriander powder, and one table spoon garam Masala, and we will stir all the spices nicely, and then immediately add a little bit of hot water to it to prevent the spices from burning, now we will cook the spices nicely for 2, 3 minutes,

5. So friends I have a nicely roasted all the spices and the oil has started separating too, and this stage we will add five chopped tomato to it, now finally we will add salt according to test,

And we will stir well after adding the salt, now cover it and let the tomatoes cook nicely it may take around 10 to 15 minutes for the tomatoes to cook, in between left the lid and keep stirring, if at any point you feel that the masala is getting dry than you can add some hot water and continue cooking further,

So friends it’s been 10 to 15 minutes let’s check it, now tomatoes are nicely cooked and the oil has separated too, at this stage you can turn the stove off and let the masala cool down before blending it, once your masala has cooled down transfer it to a mixture grinder jar and we blend it into a fine Puree,

8. So our masala become a fine paste and the base of our gravy is ready,

9. So friends making to a gravy it’s a quite a simple process and friend you can use this gravy base in multiple recipe not just this recipe you can add paneer instead of vegetables and if you eat non vegetarian food than you can even add chicken, it’s an all purpose gravy gives a nice roasty flavor, and along with it the texture becomes silky smooth so it’s quite enjoyable to eat,

10. Now the further other process like I told you we will cooking the wheels Matka in an earthen pot so I have an earthen pot, so friends if you are already have an earthen pot then you can use it, but if you are purchasing the earthen pot first time then you have to season it before using it,

11. so basically two reason it what you have to do it either you can cook rice it in a nicely or just so it in water overnight so that the pot soak up all the water, then you can easily cook in it.

12. This is how the earthen pot is seasoned, the rest of the process is simple, cooking in earthen pot is never on high flame it’s always on medium flame, and the earthen pot gives a nice Earthy  flavor to your vegetable curry so it’s taste really delicious,

13. if you don’t want to cook in an earthen pot then you can continue to cook in a normal vessel, but this earthen pot will definitely enhance the flavor a lot, let’s see the further process of tossing the vegetable and then cooking them in the gravy,

how to make Final gravy Ingredients

Final gravy Ingredients:

  • OIL AS REQUIRED
  • ONION  2 MEDIUM SIZED (CHOPPED)
  • GARLIC  1 TBSP (CHOPPED)
  • GINGER  1 TSP (CHOPPED)
  • GREEN CHILLI  2-3 (SLIT)
  • KASHMIRI RED CHILLI POWDER  1 TBSP
  • BABYCORN  1/3 CUP (BLANCHED)
  • FRENCH BEANS  1/3 CUP
  • CARROT  1/3 CUP (DICED)
  • GREEN PEAS  1/3 CUP
  • CAULIFLOWER  1/3 CUP (BOILED)
  • SALT  TO TASTE
  • ONION  1 MEDIUM SIZED (PETALS)
  • CAPSICUM  1MEDIUM SIZED (DICED)
  • FRESH CREAM  2 TBSP
  • BUTTER  1 TBSP
  • GARAM MASALA  A PINCH
  • KASURI METHI  A PINCH
  • GINGER 1 INCH (JULIENNE)
  • FRESH CORIANDER  AS REQUIRED (CHOPPED)

14. Now in earthen pot we will add two table spoon oil, to the earthen pot and Swirl it nicely to coat it properly with oil, now turn the stove on and let the oil heat up, now we will add two medium sized onion to it one tablespoon chopped garlic, one table spoon chopped Ginger, and 3 slit green chillies, and 1 inch Ginger Juliennes, now we will cook the onion until they soften and turn translucent once the onions soften than we will add one table spoon Kashmiri red chilli powder and stir quickly,

15. Now we will add the gravy that we have prepared earlier to this, and stir again well, now we have to cook this gravy for 10 minutes more on medium flame, once you have cooked the gravy for 10 minutes then reduce the flame completely,

16. Now we will take another pan and heat it a well, it is important to make sure that the pan is nice and hot, now we will add two table spoon oil to this and let it heat up well  once the oil is hot then to this we will add one third cup balanced baby corn, and we will add one third cup french beans,now you have to toss both these vegetables on high heat for two three minutes, remember not to over cook these vegetables and their crunch should stay intact,

17. After 2,3 minutes we will add 1/3 Cup diced carrots, one third cup green peas, one third cup boiled cauliflower and we will add salt according to test, now for 2 minutes you have to toss the vegetables on high flame, again make sure to keep your vegetable crunchy, after 2 minutes you have to add these vegetables into the gravy,

18.now heat the same pan nicely again, then we will add one table spoon oil to this now to this we will add one medium size onion cut into petals, and we will add one medium size capsicum diced, and you have to toss it on high flame for just a minute,

19. Once you have tossed the onion and capsicum and we will add them to the gravy too, now we will mix everything well once you have mixed everything well you don’t have to cook for long now we will add to table spoon fresh cream to this one table spoon butter A pinch of homemade garam Masala A pinch of dried fenugreek leaves, 1 inch Ginger Julienned, and lots of freshly chopped coriander leaves, add everything and stir it well,

20. After stirring taste it and adjust the salt as per your taste,

21. Now just a small step is remaining and that’s completely optional burn some coal and place it in a small bowl, and we will add one table spoon ghee to it and quickly cover it with lid, after covering it let it be for two three minutes,

22.The burning coal will give the curry a smokey flavor, and will enhance the recipe to the next level with those Earthy smoky flavours, after two three minutes remove the lid and remove and discard the coal too, and finally now we will add some fresh coriander leaves to this and your veg Matka is ready,
