OIL 2-3 TBSP
- WHOLE SPICES CUMIN SEEDS 1 TSP
- GREEN CARDAMOM 2 NOS
- CLOVES 2-3 NOS.
- BLACK PEPPER 2-4 NOS.
- CINNAMON 1/2 INCH
- BAY LEAF 1 NOS.
- ONIONS 3-4 MEDIUM SIZED (SLICED)
- GINGER 1 INCH
- GARLIC 7-8 CLOVES
- CORIANDER STEM 5-6 NOS.
- POWDERED SPICES
- TURMERIC POWDER 1/4 TSP
- SPICY RED CHILLI POWDER 1 TSP
- KASHMIRI RED CHILLI POWDER 1 TSP
- CORIANDER POWDER 1 TBS
- PCUMIN POWDER 1 TSP
- BLACK SALT 1/2 TSP
- HOT WATER AS REQUIRED
- CAPSICUM 1 NOS. (SLICED)
- TOMATOES 3 MEDIUM SIZED (CHOPPED)
- GREEN CHILLIES 2-3 NOS. (CHOPPED)
- SALT TO TASTE
- CASHEW NUTS 2-3 NOS. (OPTIONAL)
- HOT WATER 100-150 ML
- WATER AS REQUIRED
how to make Base gravy
Firstly we have to make the gravy for the tava paneer, so for that into a pan and we will add 3,4 tablespoon oil, once our oil is hot then do it we will add one table spoon cumin seed, to green Cardamom pods, 2,3 cloves, 2,4 whole peppercorns, half inch cinnamon, one bay leaf now I am adding 3,4 sliced onion to this, now we will mix all this ingredients very well, now to this add one inch Ginger 7,8 cloves of garlic, and now I am adding a few coriander stems to this, after mixing everything together you have to saute the onion well until they turn golden brown in colour,
I have added ginger and garlic without chopping itself, as we are going to blend this masala to make a gravy, so while stirring at regular intervals saute the onions until they reach a golden brown stage, once you are onion are caramelised then we have to add some spices to this,

So we will lower the flame and 1/4th teaspoon turmeric powder, one table spoon spicy red chilli powder, one table spoon Kashmiri red chilli powder, one table spoon coriander powder, one table spoon cumin powder, and half teaspoon black salt now we will add a splash of hot water to this to prevent your spices from burning,
Now you have to nicely saute the spices for 3 to 5 minutes, once your spices are cooked well then to this we will add one sliced capsicum, 3 medium size tomato, 2,3 chopped green chilli, and salt to taste, and we will add 23 kaju they are optionals you can add 2,3 kaju,

now you have to stir everything very nicely, after stirring now I am adding 100 to 150 ml hot water to this, after adding the water you will cover it and cook it for 5 to 6 minutes, I have covered it and cooked it for 4,5 minutes, add this stage you have to turn the flame off, and cool this masala completely, once your masala has cool down you can choose to remove cinnamon and bay leaves before grind it, now we have to grant this masala in mixture grinder add this masala, along with we will add just enough water to grind this masala and grind it into a fine paste,

now our masala is blended and the masala nicely and our gravy for tawa paneer is ready,
Now I have prepared this dhaba style gravy right now it’s dirty brown in colour but when we cook it nicely it will become more variant, now we have to temper it by giving a tadka on atawa, tawa paneer is made

- ONIONS 2 MEDIUM SIZED (CHOPPED)
- GARLIC 2 TBSP (CHOPPED)
- GINGER 1 INCH (JULIENNE)
- GREEN CHILLIES 2-3 NOS.
- (SLICED) TURMERIC POWDER 1/4 TSP
- KASHMIRI RED CHILLI POWDER 1 TSP
- HOT WATER AS REQUIRED
- ONION 1 MEDIUM SIZED (DICED)
- CAPSICUM 1 MEDIUM SIZED (DICED)
- PANEER 250 GRAMS (DICED)
- GARAM MASALA A LARGE PINCH
- KASURI METHI A LARGE PINCH
- FRESH CORIANDER BIG HANDFUL
- PANEER 25 GRAMS (GRATED)
- FRESH CORIANDER SMALL HANDFUL
how to make tawa paneer
Let’s see how that is done, now we have a tava now heat with our really well, then we will add two table a spoon Desi ghee on tawa, once our ghee is hot then to eat at two table spoon cumin seed, two medium size chopped onion two tablespoon chopped garlic one inch Julienned Ginger, 2,3 sliced green chillies,
you have to stir everything really well, and cook the onion until light golden brown in colour once the onion is light golden brown in colour then we have to add few spices, 1/4 tablespoon turmeric powder and I have added one table spoon Kashmiri red chilli powder is stir well after adding the spices,
now we have to add gravy to this so add the gravy that we have prepared early to this, stir well after adding the gravy and now you have to cook this gravy for 10 minutes with the tadka on the tawa, when you cook on the tava the flavour taste and texture of the food comes out really unique
So if you have a large skillet than it will be better if you cook on the tawa,now if you feel that the gravy is slightly dry then you can add some hot water to it, and adjust its consistency to further cook it, now you can see that your cooked the gravy properly for 10 minutes, and it’s become darker and richer and the oil has separated as well,
Now we have to add some more ingredient to it, so we will take a pan and add one table spoon ghee to a pan, once you are ghee is smoking hot and one onion and one capsicum diced, now you have to just toss them on high flame for just 30 second, your capsicum and onion should not lose their crunch keep that in mind
Now I am adding tossed veggies into the gravy, along with the 250 gram cubed paneer, one large pinch of garam Masala, one large pinch of roasted kasuri methi, plenty of freshly chopped coriander leaves, and here I am grating 25 grams paneer to add to this, this will give it a dhaba like feel and your gravy will become richaer,
Now toss everything nicely keep in mind to toss gently and carefully, make sure not to break the pieces of paneer, nanu need to cook any further,
Now I will check for seasoning here it’s perfect so I am not adding anymore salt, now lastly to finish it had some freshly chopped coriander and you can see our tawa paneer is ready let service it,
