What’s up guys you are. Welcome to my blog Today, I’m making ‘Lasooni Palak Paneer recipe’. This Palak Paneer recipe has amazing & extra garlic flavour. & even in restaurants this recipe is ordered a lot frequently. And It’s a very simple recipe. I’m going to tell you how to get that vibrant green colour of spinach by cooking it by blanching. Along with that garlic is fried & added.  Whole fried garlic pods are added. & it gives a very delicious flavour.

 

And  if you learn this recipe then you can make  Lasooni Palak without paneer as well. You can even add other vegetables & make a similar recipe. It’s a very easy & delicious recipe.

Ingredients For Lasooni Palak Paneer

  • Spinach Puree
  • SPINACH  300 GRAMS (WASHED & CLEANED)
  • SALT  A PINCH
  • MINT  10-12 LEAVES
  • FRESH CORIANDER  A SMALL HANDFUL
  • GREEN CHILLI  2 NOS.
  • GINGER  1 INCH
  • WATER  AS REQUIRED
  • Paneer frying
  • OIL  5 TBSP
  • PANEER 600 GRAMS (CUBED)
  • Final Cooking
  • OIL  4 TBSP
  • GARLIC  12-15 CLOVES (HALVED)
  • GHEE  2 TBSP
  • WHOLE SPICES
  • CUMIN SEEDS  1TSP
  • BLACK PEPPERCORNS  1 TSP
  • BLACK CARDAMOM  2 NO.
  • CLOVES 5 NOS.
  • CINNAMON  1 INCH
  • ONION 3 MEDIUM SIZED. (CHOPPED)
  • GARLIC  1.5 TBSP (ROUGHLY CHOPPED)
  • POWDERED SPICES
  • TURMERIC POWDER  1/2 TSP
  • SPICY RED CHILLI POWDER  1.5 TSP
  • CORIANDER POWDER  1.5 TBSP
  • CUMIN POWDER  1 TSP
  • HOT WATER AS REQUIRED
  • TOMATO  3 NOS. (CHOPPED)
  • SALT  TO TASTE
  • HOT WATER  AS REQUIRED
  • FRESH CREAM  5 TBSP
  • NUTMEG  A PINCH (GRATED)
  • LEMON JUICE OF 1 LEMON
  • Tempering
  • GHEE 1-2 TBSP
  • GARLIC  1-2 TBSP (ROUGHLY CHOPPED)
  • KASHMIRI RED CHILLI  1 NO.
  • ASAFOETIDA  A PINCH
  • KASHMIRI RED CHILLI POWDER  1/2 TSP

How To Make Lasooni Palak Paneer

Let’s learn how to make ‘Lasooni Palak Paneer recipe ‘.

Lasooni Palak Paneer Puree

For Making lehsuni palak Here, I’ve taken a large bunch or 250 grams of  spinach leaves which I have picked & cleaned. To blanch them, bring the water to a roaring boil in a vessel. Add a pinch of salt & add the spinach leaves to it. Dip the spinach & let it be in water just for 10-15 seconds in hot water. Don’t cook it for too long.

 

 

Once you have dipped the spinach in hot water for 10-15 seconds, then remove it & immediately put it in ice cold water to give it a temperature shock. This is what will give that amazing bright green colour to the spinach.

 

Once the spinach is cooled down, remove the spinach  & lightly squeeze it to remove the moisture from it. Now, transfer this spinach into a mixer grinding jar. some fresh coriander leaves, & 12-15 mint leaves, 3 green chillies, 1 inch ginger, & add a little water & prepare a paste out of it. now our spinach puree is ready.

 

 

The process of blanching the spinach is important to make this kind of recipes. By giving the spinach a temperature shock from hot water to ice cold water, the spinach retains it’s vibrant bright green colour. & secondly it helps clean your spinach thoroughly, when you dip it in hot salted water, even sticky bits will get cleaned.

 

Once you have made this paste for palak lasooni,  you can use it to  make any spinach dishes like Palak Paneer, Lasooni Palak, etc. I even make soup, it tastes amazing.

Frying Paneer

Let’s learn  the further process of frying the paneer. To fry the paneer, heat the pan on high flame, then add 2-3 tbsp of oil & heat it up well. Now to this I’ve taken 500 grams of paneer  which I’ve cut into cubes, so add that. Now Add the paneer & shallow fry it until it turns light golden brown in colour.

 

 

Don’t fry it for too long or until it turns dark golden brown otherwise the paneer will become dry. now it’s golden brown from one side,  I’m flipping it to make it golden brown from the other side too. Just like this fry the paneer. Now  our paneer is fried. You have to keep it aside.

Gravy Of Lasooni Palak Paneer

Now take a vessel & add 2 tbsp oil to it. Once the oil is hot, I’ve cut the cloves of garlic  into two halves, which I’m adding here. Now you have to fry this garlic until it is light  golden brown colour on medium flame. once the garlic is light golden brown in colour, then you can remove it & strain it. Strain it & keep it aside. & this oil has a lot of garlic flavour in it.

So we are going to use this oil ahead. Add it back to the cooking vessel. along with that add 1 tbsp desi ghee. Once the oil & ghee is hot, then add 1/2 tsp cumin seeds, 1 tsp whole black peppercorns, 1 black cardamom,3-4 cloves,1/2 inch cinnamon, & add 2 medium sized chopped onions. Now, you have to sauté the onions on  medium high flame until they are light golden brown in colour.

Coock Lasooni Palak Paneer

So Sauté the onions nicely. Once the onions are light golden brown, then add 1 tbsp roughly chopped garlic to this. Did you notice that I’ve added garlic to one more stage. Now Sauté the garlic nicely for 1-2 minutes. Once you have sautéed the garlic, then lower the flame, now add 1/4th tsp turmeric powder, 1 tsp spicy red chilli powder, 1 tbsp coriander powder, & add 1 tsp cumin powder, & stir it all well. Now add some hot water to it, so that the spices  don’t get burnt, & we get some time to cook the spices.

 

 

You don’t need to cook the spices for long just cook it for 1-2 minutes. Once the spices are cooked, then add 2 chopped tomatoes to it, & add salt to taste. Cook the tomatoes nicely until they become soft & mushy. During this process if the masala becomes dry,  then you can add some hot water to further cook it.

 

Now Cook the tomatoes nicely until they are mushy. now the tomatoes are cooked, & the oil is separated as well. At this stage, add the spinach puree that we had made & mix it very well. Now, cook this spinach puree with the masala  for 8-10 minutes, on medium flame. Cook the spinach puree nicely while stirring it.

It’s been 8-10 minutes, I’ve cooked the spinach properly. Now add the garlic that we had fried. along with it add 2-3 tbsp of fresh cream or homemade cream to it. & stir it nicely. Here, you have to cook for 1-2 minutes. At this stage, you can serve the spinach as it is.  Your Lasooni Palak is ready.

Adding More Veggies

Since we are making Lasooni palak paneer As a result, this curry just contains spinach, but if you want, you may add additional vegetables to it to make it healthier. For instance, you could add corn, green peas, peppers, etc. It would become even more protein-rich if you included some boiled

Since we are making ‘Lasooni Palak Paneer’,  add the fried paneer to the spinach. then to this add 1 pinch of grated nutmeg. Nutmeg tastes very good with spinach. Along with it add juice of half lemon. & stir it with light hands.
