How to make makhani sauce
Makhani Sauce Ingredients: Base
- OIL 2 TBSP
- BUTTER 1 TBSP
- CUMIN SEEDS 1 TSP
- ONION 2 NOS. (SLICED)
- TOMATO 6-7 NOS
- GARLIC 7-8 CLOVES
- GINGER 1 INCH
- GREEN CHILLI 2-3 NOS.
- CORIANDER STEM 1 TBSP
- CASHEW7-8 NOS.
- KASHMIRI RED CHILLI 2-3 NOS.
- GREEN CARDAMOM 3 NOS.
- TURMERIC POWDER 1/4 TSP
- KASHMIRI RED CHILLI POWDER 1 TSP
- CORIANDER POWDER 1/2 TSP
- SALT TO TASTE
- HOT WATER AS REQUIRED
- WATER AS REQUIRED
Final cooking
- BUTTER 2-3 TBSP
- GINGER 1 TSP (CHOPPED)
- GARLIC 1 TSP (CHOPPED)
- KASHMIRI RED CHILLI POWDER 1/4 TSP
- HONEY 1 TBSP
- FRESH CREAM 2-3 TBSP
- KASURI METHI POWDER A PINCH
- GARAM MASALA A PINCH
- FRESH CORIANDER A SMALL HANDFUL (CHOPPED)
- SALT IF REQUIRED
1. First of all let’s how to make makhani sauce in a vessel we will take to table tbsp oil, and one table spoon butter, and let it melt now to this we will add one tablespoon cumin seeds, and we will add to medium size onion and saute the onion for 3 minutes, now I am adding to this 8 chopped tomatoes, 8th cloves of garlic, 1 inch Ginger, three green chillies, one tablespoon coriander stems, 8 cashews, 3 dried Kashmiri Red chillies, 3 green Cardmon, 1/4th table spoon turmeric powder, 1 teaspoon Kashmiri red chilli powder, half teaspoon coriander powder,
2. And we will add salt according to test, and stir everything together nicely, after stirring cook it well for 2 minutes on high flame, and after that we will add some hot water to it and stir well,
3. Now cover it and let all these things cook for about 15 minutes covered, After 15 minutes you can see that everything is cooked and tomatoes are nice and soft turn the stove of and let everything cool down nicely, once the mixture is cooled down then add it to a mixer grinder jar and we will add some water and blend it to a fine paste so friends we have blended our makhni sauce now we have to temper it, In a sauce pain we will add 3 table spoon butter, 1 tablespoon Ginger,
4. One tablespoon garlic, and the saute it for 2 minutes, now lower the flame and we will add 1/4th table spoon Kashmiri red chilli powder, stir it nicely, now using sieve strain the makhani sauce and add to this, this process of straining will give the makhani sauce it’s a velvety smooth texture,
5. Once you have added the strained gravy cook it while stirring for 3 to 4 minutes, after 3,4 minutes we will add one table a spoon honey to it three table spoon fresh cream, A pinch of roasted kasuri methi powder, A pinch of garam Masala, and we will add some freshly chopped coreander leaves, and stir very well, and we will taste makhani sauce and adjust the salt, so friends our beautiful butter chicken gravy is ready,
How to make Momos Dough
Chicken tikka flavoured momos Dough
- REFINED FLOUR 2 CUPS
- SALT TO TASTE
- WATER AS REQUIRED (ADD GRADUALLY)
6. To make the dough for momos recipe in a Big Bowl we will take one cup refined flour, we will add A pinch of salt, and now to this gradually we will add water add enough water to give you a semi stiff dough, so slowly add water and combine the water with the flour, once the flour is combined then transfer it to a kitchen platform, knead it nicely for 8 to 10 minutes until that dough is completely smooth, after 8 to 10 minutes you can see that you are dough has become really smooth,
7. Now we will make a ball out of it and place it in a bowl and cover it with a moist cloth, and rest it for about 15 minutes, let’s make the filling for the momos by then,

- CHICKEN 500 GRAMS (MINCED)
- ONION 1 NO. (CHOPPED)
- SPRING ONION GREENS A LARGE HANDFUL (CHOPPED)
- FRESH CORIANDER A BIG HANDFUL (CHOPPED)
- GREEN CHILLI 3 NOS.
- GINGER 1 TBSP (CHOPPED)
- GARLIC 2 TBSP (CHOPPED)
- LEMON JUICE 1 TSP
- SALT TO TASTE
- BLACK SALT A PINCH
- DRY MANGO POWDER 1/2 TSP
- CHAAT MASALA A PINCH
- KASHMIRI RED CHILLI POWDER 1 TBSP
- CORIANDER POWDER 1 TSP
- GARAM MASALA 1/4 TSP
- TURMERIC POWDER 1/4 TSP
- BLACK PEPPER POWDER A PINCH
- GHEE 1 TBSP
- WATER 100 ML
Momo cooking
- OIL 2 TBSP
- BUTTER 1 TBSP
- WATER 50 ML
8. In a bowl we will add 500 grams of minced chicken, Now we will add one chopped onion, lots of spring onion greens, and lots of freshly chopped coriander leaves, three green chillies chopped, one table spoon Ginger, two table spoon chopped garlic, one table spoon lemon juice, and salt according to taste, A pinch of black salt, half teaspoon dry mango powder, A pinch of chat masala,
1 tablespoon Kashmiri red chilli powder, 1 tablespoon coriander powder, 1/4th table spoon garam Masala, 1/4th table spoon turmeric powder, A pinch of black pepper powder, one table spoon ghee, and I have added 100 ml water here now mix all these ingredients nicely adding ghee and water will make the filling for your momos moist and juicy,

9. Once everything is mixed together you can see that you are filling for momos recipe is ready, And our dough is well rested too now, take out a large portion from the dough and coat this dough ball with a dry flour, now please it’s on a rolling disc or a platform and roll it out using a rolling pen into a thin chapati, and I have rolled it out it’s thickness should be slightly thinner than our regular chapati, now using a round cutter cut roundels, your momos wrapper should be about 4 inch in diameter,
10. Once you have prepared the momos wrappers like that then it’s time to shape the momos, now place the momos rappers on your palm and now at the chicken filling in its centre
11 And you have to fold it to make it into a taco shape, now here at once corner you have to pinch it like this to seal it, once you have pinched the corner than using the other finger make a fold and then pinch it again repeat the same process fold and pinch fold and pinch and keep going forward, until you get a shape like momos, now again press all the edges nicely again to make sure your momos are properly sealed, and it has a uniform shape so I have shaped the momos, So similarly shape all the momos so friends makhani sauce is ready and our momos are shaped and ready the method of shaping the momos that I have tell you,
How to cook momos
12. Now we have to cook the momos by panfrying let’s how to do that, I have taken a fry pan and we will heat a pen very nicely now we will add two tablespoon oil, to it and we will add 1tbsp butter, to it, once the butter melts then place the momos in the pan, after placing the momos in cook them until under surface of the momos turn light golden brown in colour, it may takes about 2 to 5 minutes,
13. So friends this is how your momos should we cooked from one side at this stage you have to add about 50 ml water to it, add water and instantly cover the lid after covering the lid cook these momos on medium low flame for 6 to 8 minute on the clock,

14.
