Hey what’s up guys you are welcome back on my new blogs friends today I am making schezwan chicken fried rice and you can say that chicken triple Schezwan rice,it is an actually indo Chinese style recipe and triple Schezwan rice is something that we all love, today I am sharing the nonveg version with

 a very important thing in this recipe is red chilli paste which is used in restaurants with Schezwan or Indo Chinese recipe, if you people as Schezwan sauce but the base for gravies and even for schezwan fried rice a red chilli paste is added,

So firstly I will tell you how to make that red chilli paste at home, then we will make chicken gravy and Schezwan style rice and noodle combination, and then this recipe will be served, it is very interesting recipe and is a very delicious very Indo Chinese style  Schezwan Chicken Fried Rice which is slightly spicy and tangy,

How to make Schezwan Chicken Fried Rice

# Homemade red chilli paste Ingredients:

  • KASHMIRI RED CHILLI  20-25 NOS. (DESEEDED & SOAKED)
  • WATER  AS REQUIRED
  • OIL  1/3 CUP
  • SALT  A PINCH
  • VINEGAR 1 TBSP

Fried Chicken Ingredients:

  • CHICKEN  400 GRAMS (BREAST)
  • SALT TO TASTE
  • BLACK PEPPER POWDER  A PINCH
  • GINGER GARLIC PASTE  2 TSP
  • LIGHT SOY SAUCE  1 TSP
  • HOMEMADE RED CHILLI PASTE  1 TSP
  • EGG  1 NO. (WHITE)
  • CORN FLOUR  3 TBSP

Ingredients:

  • OIL  2 TBSP
  • GARLIC  3 TBSP (CHOPPED)
  • GINGER  1 TBSP (CHOPPED)
  • SPRING ONION BULBS  A HANDFUL
  • GREEN CHILLI  1 NO. (CHOPPED)
  • LIGHT SOY SAUCE  1 TSP
  • KETCHUP  3.4  TBSP
  • RED CHILLI SAUCE  2 .5 TBSP
  • VINEGAR 1 .5 TSP
  • GREEN CHILLI PASTE  OF 1-2 GREEN CHILLIES
  • CORIANDER STEMS  2 TBSP (CHOPPED)
  • WHITE PEPPER POWDER  A PINCH
  • SALT  TO TASTE
  • HOMEMADE RED CHILLI PASTE  2.5 TBSP
  • HOT WATER / CHICKEN STOCK  AS REQUIRED
  • CORN FLOUR  2 TBSP
  • WATER  3 TBSP
  • CABBAGE  1/2 SMALL SIZED (JULIENNE)
  • CARROT  2 NO. (JULIENNE)
  • CAPSICUM  2 NO. (JULIENNE)
  • SPRING ONION  A HANDFUL (CHOPPED)
  • SPRING ONION GREENS  A HANDFUL (CHOPPED)

Schezwan Rice Ingredients:

  • OIL  2-3 TBSP
  • GARLIC  2 TBSP (CHOPPED)
  • GINGER  1.5 TSP (CHOPPED)
  • SPRING ONION A SMALL HANDFUL (CHOPPED)
  • CABBAGE 1/2 CUP (CHOPPED)
  • CARROT 1/2 CUP (CHOPPED)
  • FRENCH BEANS 1/2 CUP (CHOPPED)
  • EGG  1 NO.
  • SELA BASMATI RICE  4 CUPS
  • COOKED BOILED NOODLES  100 GRAMS
  • LIGHT SOY SAUCE 1 TSP
  • VINEGAR  1 TSP
  • KETCHUP  1 TSP
  • GREEN CHILLI PASTE  OF 1 GREEN
  • CHILLI HOMEMADE RED CHILLI PASTE 2 TBSP
  • SUGARA PINCH
  • WHITE PEPPER POWDER A PINCH
  • SALT TO TASTE
  • SPRING ONION GREENS  A HANDFUL (CHOPPED)

So let’s learn

how to make a triple Schezwan rice

1. For chilli paste I have deseeded and socked 25 Red chillies in hot water for half an hour, now we will add these chillies in a mixer grinding jar and add some water and prepare a smooth fine paste, so our chilli paste is ready,

2. Now we will take a fry Pan, and heat a fry pan on high flame nicely, now we will add half cup oil in this pen oil will be slightly higher, once the oil is hot then we will add the chilli paste which we just made, now add A pinch of salt to it, and while stirring, cook it on medium High flame, until the colour of this paste become deeper and darker, and it’s texture will become more granular and crumbly, so cook this paste nicely until you get that texture,

 

 

3. You will see after about 10 minutes of cooking this paste the colour and texture has changed, which means that our paste is nicely cooked, at this stage we will add one table spoon of vinegar which act as a preservative, now mix the vinegar nicely and you will see that our homemade red chilli paste is ready, So I have made this homemade chilli paste in extra quantity itself I will use some of it right now, and you can store it in an airtight container and keep it in the refrigerator the excess oil that we added will float on the top and preserve it, and it will not spoil for one month whenever you want to make a recipe like this schezwan fried rice noodles or triple Schezwan rice,

4. Or if you want to make a gravy is like Schezwan chicken, veg manchurian, or Schezwan style dishes, so you can use this chili paste in that, and the chilli oil floating on top can also be used at some in Hakka noodles, add some in fried rice to chilli oil has loads of flavour and gives a nice colour too, so you will not need to use any artificial colour like the red colour which is used in restaurants,

 

How to make the chicken gravy

5.So the chilli paste is ready now next we have to make the chicken gravy let’s learn how to make the chicken gravy,

6. Here I have taken 400 grams chicken breast you can also use chicken Thigh, and I have cut them into pieces you can even shred them or cut them into long pieces, now we will add salt according to taste A pinch of black pepper powder, two tablespoon ginger garlic paste, 1 table spoon light soya sauce, and we will add one table spoon homemade red chilli paste, now mix everything using your hands make sure you clean your hand before doing it, once you have mixed properly then we will add white of one egg to it,

7. After adding the egg white we will add 3 table spoon of cornstarch, now apply corn starch and egg white to the chicken nicely, It should have a thin coating over the chicken it should not be like a batter coating, the chicken with thin coating taste good this is how the coating should be,

 

 

8. Once you have marinated the chicken then you have to fry so I have taken a fry pan and I have heated oil in a pan at 170 degree Celsius, meaning the oil is hot, now we have to fry the chicken on high heat once the oil is hot add the chicken slowly slowly, because it is chicken breast it will cook quickly keep in mind once the better solidifies the chicken holds its structure, just within 3 to 4 minutes this chicken will be perfectly fried, if you are taking chicken Thig then it my take a little longer and fry it on a medium flame,

9. Once the chicken is fried take it out of oil, and take it out in a sieve to remove excess oil, And similarly fry the rest of the chicken too, one’s fried I am taking out some pieces of the fried chicken, take them out on a chopping board and roughly cut them, and we will use this chopped fried chicken in the fried rice so keep it aside, And we will use the rest of the chicken in the gravy,

 

 

10. To make the gravy we will take a wok and heat the wok on a high flame nicely, now we will add two tablespoon oil to it three table spoon chopped garlic, one table spoon chopped Ginger, some spring onion bulb, and we will add one chopped green chilli, saute the ginger garlic on high flame for 1 minute,

Now to this we will add one table spoon lightly soya sauce, 3 table spoon ketchup, two tablespoon red chilli sauce, 1 table spoon vinegar, paste of two green chillies for spicyness, two tablespoon coriander stems, one pinch white peeper powder, and we will add salt according to test and stir well,

11. Now we will add two table a spoon homemade red chilli paste and stir it well, then you have to add hot water or chicken stock to this add as per the amount of gravy that you need, so I have added about half litre water, stir it well and bring it to a boil, Once it comes to a boil, then thicken this gravy,

We have to make a cornstarch slurry, So in a bowl we will take one table spoon cornstarch, and add two table spoon water and mix it well, now add this slurry slowly a gradually and continue to cook it until the gravy thickens,
You will see that after adding the slurry the gravy has thickened,

 

 

12. Now I have shredded half cabbage and added to this, added juliennes of 1 carrot, and have cut juliennes of one capsicum and added, along with that some spring onion, and we will add the fried chicken, now cook everything for 2,3 minutes on high flame while stirring, once you have cooked it for 2, 3 minutes now we will add some spring onion green on top, and you will see that your Schezwan style chicken gravy is ready,

13. So you have learn how to make schezwan styles chicken gravy, in the same recipe instead of adding Juliennes of vegetables, if you add petals of capsicum and onion,then it will become Schezwan style chicken so you have learnt the recipe of that too, In triple Schezwan rice the vegetables are cut long,

14. Now once the gravy is done next we have to cook rice and noodles schezwan style, on top of which this gravy will go, so I have already cook the rice and noodles,

16. Now let’s learn how to cook these rise and noodles in Schezwan style for this recipe,

Now we will take a wok, heat a wok nicely, once hot then we will add two tablespoon of oil in it, now add two table spoon of chopped garlic, one table spoon chopped Ginger, and we will add some spring onion and cook them for just one minute, now to this we will add half cup chopped cabbage, half cup chopped carrots, and we will add half cup chopped french beans and toss for 1 minute on high flame, once you have cooked your vegetable take them aside a little bit,

18. Now nicely beat and egg into a bowl, once whisked, add the egg in Between, and the egg set a bit and once set try to break it into small pieces like this and mix it, and mix it with all the vegetables, now I am adding cooked seal basmati rice to it, I cooked one cup of rice, which has become 4 cup of cooked rice,

I have coiled and added 100 grams noodle as in half a packet, 1 table spoon light soya sauce, one table spoon vinegar, one tablespoon ketchup, paste of green chillies, two tablespoon homemade red chilli paste, a pinch of sugar, a pinch of white pepper, and salt according to teste,

19. Now stir everything well and cook everything on high flame for 2,3 minutes, once you have cooked the rice then in the end we will add spring onion greens, and we will add chopped chicken as well, and mix everything well and you will see that your rice and noodles are ready,

So you learn how to make rice and noodles, I have just used half packet of noodles the other half has to be fried,

Fried noodles are important for triple Schezwan rice I have already tell it before so not making the recipe to long, now all the preparation is done let’s assemble and serve our triple chicken Schezwan rice,
