Chole Bhature recipe is also known as Chana Bhatura, chole bhature recipe is one of the most popular Punjabi dish, it is  liked almost all over India. Chole stands for a spiced tangy chickpea curry and Bhatura is a soft and fluffy fried like puri. Chola Bhatura always make for a delicious and filling meal. In this recipe post, I have included the step-by-step of making both the chana curry as well as a quick bhatura and chana masala that bhatura is made without yeast.

About Chole Bhature

Chole atura is a very spicyand very tasty and a filling dish. I have eaten this chole bhature at many places in india mostly in Punjab and Delhi. Each restaurants or dhaba  have their own flavors and texture and taste in the chickpea curry

In this block I will share you how to make perfect black chole and I will also share you how to make perfect chole masala at home, which will your chole will be perfect and mind blowing,

And I am using special chole for chole recipe, and along with I am going to share you how to make perfect bhature, it will be game changer recipe I am going to share all tips and tricks, and I am not using any kind of yeast, and your bhature will be very fluffy and soft,

Chana Masala Ingredients:

WHOLE SPICES

  • CUMIN SEEDS 2 TBSP
  • CORIANDER SEEDS  3 TBSP
  • BLACK PEPPERCORNS 1 TBSP
  • CLOVES  5 NOS.
  • BAY LEAVES  3 NOS.
  • CINNAMON STICK  2 INCH
  • STAR ANISE 1 NO.
  • BLACK CARDAMOM  3 NOS.
  • GREEN CARDAMOM  5-6 NOS.
  • MACE  1 NO.
  • SPICY RED CHILLIES  4-5 NOS.
  • POMEGRANATE SEEDS  3 TBSP
  • KASURI METHI  1 TBSP
  • FENUGREEK SEEDS  1/4 TSP
  • SALT  A PINCH

POWDERED SPICES

  • DRY MANGO POWDER  1 TBSP
  • BLACK SALT  2 TSP
  • KASHMIRI RED CHILLI POWDER  1 TBSP

Amritsari Chole Ingredients:

For boiling

  • CHICKPEAS  2 CUPS
  • DRY AAVLA  1 TBSP
  • WATER  AS REQUIRED
  • TEA LEAVES  2 TBSP

WHOLE SPICES

  • CAROM SEEDS  1 TSP
  • BLACK CARDAMOM  2 NOS.
  • GREEN CARDAMOM  3 NOS.
  • CLOVES  3 NOS.
  • BLACK PEPPERCORNS 3-4 NOS.
  • CINNAMON STICK  1 INCH
  • BAY LEAF  3 NOS.
  • GARLIC  6-7 CLOVES (CRUSHED)
  • WATER  AS REQUIRED
  • SALT  TO TASTE
  • BAKING SODA 1/2 TSP

Base Masala / Gravy

  • CHANA MASALA 3 TBSP
  • OIL  4 TBSP
  • CAROM SEEDS  1 TSP
  • ONIONS  4 MEDIUM SIZED (CHOPPED)
  • GINGER GARLIC PASTE  3 TBSP
  • GREEN CHILLI  1-2 (CHOPPED)

POWDERED SPICES

  • TURMERIC POWDER  1/4 TSP
  • SPICY RED CHILLI POWDER  2 TSP
  • CORIANDER POWDER  1 TBSP
  • CUMIN POWDER  1 TSP
  • CHANA MASALA  1 TBSP
  • TOMATO PUREE  OF 4-5 TOMATOES
  • SALT  TO TASTE

Final cooking

  • SALT  IF REQUIRED
  • CHANA MASALA  A LARGE PINCH
  • ROASTED KASURI METHI POWDER  A PINCH
  • GREEN CHILLI  2-3 (SLIT)
  • GINGER  1 INCH (JULIENNE)
  • GHEE  2 TBSP
  • FRESH CORIANDER  A HANDFUL (CHOPPED)

For bhature Ingredients:

  • REFINED FLOUR  2 CUPS
  • SEMOLINA 1/4 CUP(FINE)
  • POWDERED SUGAR  1 TBSP
  • BAKING POWDER  1/2 TSP
  • BAKING SODA  1/2 TSP
  • SALT  A PINCH
  • CURD  1/3 CUP
  • WATER  3/4 CUP (ADD GRADUALLY)

OIL  2 TBSP

How to make Chole Bhature

Soak and Pressure Cook Chickpeas

1. Firstly we will rinse chickpeas So I am here using two cup Kabuli chane ( chickpeas)  I am adding in a bowl and we will add a lot of water you will have to wash this choly very clearly, once you have washed choley perfectly and now we will discard the water, here I am using dry amla, so we will add one table spoon dry amla in chole, now we will add lot of water, for shocking kabuli chane, we will socked this chole for 6 to 8 hours,

2. If you soaked chole 6to 8 hours your chole recipe will become very soft, so you will have soaked chole perfectly, and I am using here amla for giving colour in chole recipe,

3. So our chole have been socked nicely and size in double, we will drain the water,

How to boil chana

4. Now before boiling chole I am making a packet that we will use in boil

5. In this packet I’m using one table spoon tea, one table spoon big cardamom, 1 table spoon carom seeds , 3 cardamom, 3 cloves, 3to4 black pepper corn, one inch cinnamon, three bay leaves, and 6-7 garlic cloves, for black colouring in our chole,

6. Now we will boil our chole in a pressure cooker and we will add this packet in our chole, and we will add water water we should use only 1 inch over surface of our chole, along with we will add salt according to test, and we will add half teaspoon baking soda, and we will cook this chole for 3 to 4 whistle, after 4To5 whistle turn off stove And de pressurize the cooker,

7. So we will check our chole, And our chole perfectly cooked, and chhole color is very beautiful and black, and our chhole is very soft, now we will discard the water and drain the chole in a seave,

8. And rember don’t throw this water because we will use this water for making chole, because in this water protein is available and flavour is very much high,

9. So now we have cooked the chole perfectly,

10. Now next we are making chhole masala which is a game changer for our chole Bhature recipe, so let’s learn how to make chole masala,

11. Here I am using a big fry pan and on high flame when pan is hot then we will medium the flame,

13, Now we will add two tablespoon cumin seed, two tablespoon coriander leaves, 1 table spoon black pepper seed, 4-5 cloves, 3-4 bay leaves, 2-inch cinnamon stick, one star anise, 3 black Cardamom, 5-6 green cardamom, 1 mace, 4-5 spicy Red chillies, 3 table spoon pomegranate seed, one table spoon kasuri methi, 1/4th teaspoon fenugreek seeds, and A pinch of salt,

14, Pomegranate seed is very important seeds for this chole masala, now we will mix together every ingredient and roast medium flame, till then Aroma comes in my kitchen,

15. Now our chana masala roasted and we will transfer this masala in a bowl, and cool down for room temperature, when you are masala cool down then we will grind it,

16. Along with I am using one table spoon dry mango powder, two spoon black salt, and one table spoon Kashmiri red chilli powder, and we will grind all spices, so our chhole masala is ready, now we will store this chana masala or chhole masala in a tight container, you can use this masala for 2 to 3 months,

How To Make Chole

17, Now let’s learn how to make chole, now we will adding 3 table spoons chana masala we have prepared earlier, in our chole, now we will mix this dry masala in our chole, we will quote dry masala on our chole so the texture of masala will come very delicious and nice,

18. Now I am using a big iron vessel, I am using iron vessel because chole colour will be darken in iron vessel, now I am adding 4 table spoon oil when oil have been hot, now I am adding one table spoon cumin seed, one table spoon carom seed, now we will add 4 chopped medium size onion, now we will roast onion till then onion golden brown,

Make Onion Tomato Masala

19. So we will stir till then onion would be golden brown, when our onion would be golden brown at this stage we will add 3 table spoon ginger and garlic paste, along with will add 4 chopped green chilli, now we will roast 2 or 3 minutes till then our ginger garlic paste cooked,

20. At this stage we will add one table spoon turmeric powder, two spoon spicy red chilli powder, 1 table spoon coriander powder, 1 table spoon cumin powder, and one table spoon homemade chhole masala, now we will cook this masala fort 3 to 4 minutes,

21. once you have cooked the masala, now we will add puree of 3to 4  tomato, and along with we will add salt according to teste, now we will stir till then our tomatoes puree perfectly cooked, now we will cooked our masala till then oil separate from our masala, and our masala perfectly cooked and oil separate from our masala,

22. At this stage I am adding our chole, along with I am adding chole water, we will mix everything together, now we will stir everything slowly slowly, for 2 to 3 minutes we will cook for further 4 to 5 minutes, and our perfectly chhole cooked, and our black black chole is ready for chole bhature,

 

23. At this stage I am adding one table a spoon chana masala, one tablespoon roasted kasuri methi, and 2-3 green chillies, and 1 inch Ginger Julienned,

Tempring for Chole

24. Now I am using a small fry pan and in a fry Pan I am adding two table spoon desi ghee and hot desi ghee now we will add this desi ghee in our chole, so this is perfectly tempering of our chole, we will stir everything after adding ghee, now you will add hand full chopped green coriander leaves, so our Amritsari chhole is perfectly ready,

How To Make Bhature

25. Now I am making bhature let’s learn how to make bhature, how to prepare perfect dough for bhature, I am using a big bowl I am adding two cup all purpose flour or refined flour, 1/4th cup semolina, one table spoon sugar powder, half teaspoon baking powder, half teaspoon baking soda, salt according to teste, and one cup card,

26. And mix everything all together, after mixing all ingredient we will add water slowly slowly, so we will combined everything all together,

Pro Tips

27, Remember one thing we’ll we are prepareing dough for our bhature, our dough should we smooth, here I am adding two tablespoon oil, sprinkle oil on our dough, we will mash our dough for 3 to 4 minutes, so this process will be our dough will be very smooth,

28. At this stage we will make a big dough ball, and we will put oil on this dough, and we will cover this dough from moist cloth, and this dough will rest for 2 to 3 hour,

29. Hare dough resting phace is very important,

30. After resting our bhature dough is very soft and perfectly ready, now we will make small dough from this big dough,

31. So I have prepared the dough for our bhature recipe,

32. . You can also make a round shape you will have to prepare roundle shape from this dough and prepare all bhature for this though and put this doug in hand we will add some oil on this dough, and we will cover up this dough from moist cloth, once you have prepared all the small dough, and rest 10 to 15 minutes all the dough,

How To Fry Bhature

31. Now let’s learn how to fry this bhature

32. For frying this way today I am using a big iron kadai, now I am using 500 grams oil, now we will hot our oil, our oil should be 180 degree Celsius, and we will fry this bhature on very high flame, so our oil is perfectly hot, now I am making bhatura,

33. So take a one dough or small ball of dough, and on a flat surface we will round shape and this dough,

33 Now Using a rolling pin, roll into an oval or elongated shape

34. and we will fry this bathura from hot oil and our flame should be very high,we will sprinkle hot oil on this bhatura so your bhatura will be very fluffy, and your perfect bhatura will be fry, we will fry our batura till then golden brown, and discard this bhatura from hot oil,

35. And our bhatura is perfectly ready.
