What is honey chilli potato
It is an also Chinese recipe and it is very commonly ordered honey chilli potatoes in the restaurant firstly the potatoes are cooked until crispy and they are tossted in a tangy slightly spicy slightly sweet sauce and this recipe taste to really delicious, and in this recipe I will show you how to fry the potatoes in a batter until absolutely crispy, it is a very simple recipe and gets ready quickly

how to make really crispy honey chilli potatoes
Ingredients:
- Fried Potato POTATO 3-4 NOS
- VINEGAR 1 TSP
- SALT TO TASTE
- REFINED FLOUR 1/2 CUP
- CORN FLOUR 1/2 CUP
- SALT TO TASTE
- BLACK PEPPER POWDER A PINCH
- BAKING SODA A PINCH
- WATER 3/4 CUP (ICE COLD)
- Sauce & Tossing OIL 2-3 TBSP
- GINGER 1 TBSP (CHOPPED)
- GARLIC 2 TBSP (CHOPPED)
- GREEN CHILLI 2-3 NOS.(SLICED)
- SPRING ONION BULBS 2 TBSP
- HOMEMADE SCHEZWAN SAUCE 2 TBSP
- RED CHILLI SAUCE 1 TBSP
- KETCHUP 3 TBSP
- LIGHT SOY SAUCE 1 TSP
- HONEY 2-3 TBSP
- WHITE PEPPER POWDER A PINCH
- SALT TO TASTE
- ONION 1 NO. (SLICED)
- CAPSICUM 1 NO. (SLICED)
- WATER A SPLASH
- CORN FLOUR 2 TBSP
- WATER 4 TBSP
- FRESH CORIANDER A SMALL HANDFUL (CHOPPED)
- SPRING ONION GREENS A SMALL HANDFUL (CHOPPED)
First of all let’s see how to prepare the potatoes
How to cut potatoes
Peel the potatoes and then cut the top and bottom than hold it vertically and cut 1 centimetre slice then cut them like french fries it should be roughly around 1 cm thick, so cut the potatoes like this and you will have French fries style cut potatoes, similarly cut 3,4 medium size potatoes
How to Wash Potatoes
Now we will take a big vessel now in a soak bring the water to rolling boil then we will add one table spoon vinegar which is very important then we will at salt to taste now at the chopped potato to this water now Blanch the potatoes for just 3,4 minutes, just par boiled it you don’t need to completely boil them, this process will slightly cook the potatoes and significant amount of starch will come out of them, vinegar will make the potatoes retain their structure that’s why I have added vinegar hare,
after 3 to 5 minutes strain the potatoes and take them out in a sieve to let them cool down, while our potatoes are cooling let’s make the batter
How to make Batter of honey chilli potatoes
In a big bowl take half cup refined flour, aap kab floor salt to test a pinch of black papper powder and we will add a pinch of baking soda now add 3 ,4th Cup chilled water to it, add water slowly and keep mixing it to avoid lumps in the batter, slowly continue to add water and keep stirring to make a semi-thics slurry, now you can see that your batter is ready, and the even the potatoes are cool down let’s fry them,
How to fry potatoes
To fry heat the oil your oil should be at about 165 degree Celsius, and you have to fry the potatoes on medium flame dipe the potatoes in the batter and remove the excess batter, then very carefully drop the potatoes one by one in the oil, don’t fry the potatoes all at once Fry in batches, to make the potatoes really crispy I am going to double fry them,so now fry the potatoes until light golden brown colour, once your potatoes are light golden brown take them out, and we will transfer them sieve,
And give them a rest of about 5 minute and till then let the oil heat up even further up to about 180 degree Celsius after resting for 5 minute at the potatoes to hot oil again, and keep the flame high and fry it again for one and two minutes, by this process your potato will become super crispy, now 2 minutes are down remove the potatoes and transfer them to a sieve our potato are fried nicely,
How to make Sauce for Honey chilli potatoes
Now let’s make the sauce for potatoes,
Now we will take a wok and heat it nicely on high flame. Now we will add two 3 tablespoon oil and we will add one table spoon chopped Ginger, 2 table spoon chopped garlic, and two three sliced green chillies, cook the ginger and garlic for 1,2 minutes, now we will add two table spoon spring onion bulbs,
two table spoon homemade Schezwan sauce, one table spoon red chilli sauce, 3 table spoon tomato ketchup, one table spoon light soya sauce, 2,3 tablespoon honey, and we will add a pinch of white pepper powder, and salt to taste, GO light on salt as the sauces will also have salt, and we will add one sliced onion and one slides capsicum cook everything for just 1 minute while stirring,

and now we will add some water to make it saucy and while stirring let it come to a swimmer,
Now we will take a small bowl take to table spoon corns starch, and at 4 table spoon water to make a corn starch slurry to thicken the sauce, and the salary to the sauce and while stirring cook on high flame, and you can see that you are sauce has thickened,
Now lower the flame and add fried potatoes to it along with it at some chopped fresh coriander leaves and some chopped spring onion greens, and we will stir them nicely don’t cook the potatoes too much at this stage otherwise they will turn soggy, just toace them with the sauce, and you can see that your crispy honey chilli potatoes are ready,
Now we will serve it, we will take a small plate and transfer this honey potatoes and spring onion greens and toasted seasame seeds and our crispy honey chilli potatoes are ready to eat,
